Smash Burger

Ingredients
- to taste white onion, chopped
- 8 1000 g ground beef (80/20), portioned into 125g balls
- to taste mayonnaise
- 4 burger buns
- to taste salt
- 8 American cheese slices
- to taste burger sauce
- to taste mustard
Method
- Chop the white onion.
- Portion the burger meat into 125g balls, loosely packed by hand.
- Spread a thin layer of mayo on the buns.
- Heat the pan on high heat. Partway through heating, toast the buns.
- When the pan is at full heat, drop two of the balls onto the hot surface and immediately smash them down flat. Salt once smashed.
- After 2 minutes, flip the patties. Add a slice of American cheese and put a lid on the pan.
- Wait 30 seconds to 1 minute for the cheese to melt, then remove the burgers.
- Garnish with raw yellow onion, burger sauce, and mustard.
