Instant Pot Korean-Style Beef

Ingredients
- 1 1/2 lb 700 g beef sirloin or flank steak, thinly sliced
- 1 tbsp 15 ml sesame oil (or olive oil)
- 3 cloves garlic, minced
- 1-inch piece ginger, grated (or ground ginger)
- 1/2 cup 120 ml low-sodium soy sauce
- 1/4 cup 55 g brown sugar or honey
- 2 tbsp 30 ml rice vinegar (or apple cider vinegar)
- 1 tbsp 8 g cornstarch
- 1/2 cup 120 ml beef broth
- 2 green onions, sliced, plus extra for garnish
- 1 tsp toasted sesame seeds (optional)
- 3 cup cooked jasmine or basmati rice, for serving
Method
- Set the Instant Pot to sauté (normal). Add the sesame oil, then the garlic and ginger, and cook 30 seconds.
- Add the sliced beef, season lightly with salt and pepper, and sear 2–3 minutes until lightly browned.
- Whisk the soy sauce, brown sugar, vinegar, cornstarch, and broth until smooth. Pour over the beef and stir to coat.
- Lock the lid and cook on high pressure for 10 minutes. Let the pressure release naturally for 10 minutes, then quick-release the rest.
- Set the pot to sauté, stir in the green onions, and simmer 2–3 minutes to thicken the sauce slightly.
- Serve the beef and sauce over rice, garnished with sesame seeds and extra green onions.
Notes
- Optional vegetable add-ins: after pressure cooking, stir in broccoli florets, snow peas, or sliced bell peppers, then close the lid for 2 minutes to steam.
