Instant Pot Korean-Style Beef

Ingredients

  • 1 1/2 lb 700 g beef sirloin or flank steak, thinly sliced
  • 1 tbsp 15 ml sesame oil (or olive oil)
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated (or ground ginger)
  • 1/2 cup 120 ml low-sodium soy sauce
  • 1/4 cup 55 g brown sugar or honey
  • 2 tbsp 30 ml rice vinegar (or apple cider vinegar)
  • 1 tbsp 8 g cornstarch
  • 1/2 cup 120 ml beef broth
  • 2 green onions, sliced, plus extra for garnish
  • 1 tsp toasted sesame seeds (optional)
  • 3 cup cooked jasmine or basmati rice, for serving

Method

  1. Set the Instant Pot to sauté (normal). Add the sesame oil, then the garlic and ginger, and cook 30 seconds.
  2. Add the sliced beef, season lightly with salt and pepper, and sear 2–3 minutes until lightly browned.
  3. Whisk the soy sauce, brown sugar, vinegar, cornstarch, and broth until smooth. Pour over the beef and stir to coat.
  4. Lock the lid and cook on high pressure for 10 minutes. Let the pressure release naturally for 10 minutes, then quick-release the rest.
  5. Set the pot to sauté, stir in the green onions, and simmer 2–3 minutes to thicken the sauce slightly.
  6. Serve the beef and sauce over rice, garnished with sesame seeds and extra green onions.
