How to Cook Filet Mignon

Ingredients
- 2 tbsp 30 ml extra-virgin olive oil
- 4 filet mignon (6 oz each)
- to taste kosher salt
- to taste black pepper
- 4 tbsp 56 g butter
- 1 tbsp 15 ml rosemary, roughly chopped
Method
- Preheat the oven to 200°C (400°F). Heat the oil in a large ovenproof skillet over medium-high heat. Season the steaks with salt and pepper on both sides.
- When the oil is just about to smoke, add the steaks. Cook until well seared, about 5 minutes, then flip and add the butter and rosemary. Baste with the butter and cook 3–5 more minutes.
- Transfer the skillet to the oven and cook to your liking, about 5 minutes for medium.
- Remove from the pan and let rest 5 minutes before slicing.
Notes
- Check the internal temperature before transferring to the oven — if you're within 10°F (about 5°C) of your target, you'll need less oven time. Check every couple of minutes near the end to avoid overcooking.
