The Best Beef Stroganoff

Ingredients

  • 1 lb 450 g ribeye steak, trimmed and cut into strips
  • to taste salt and pepper
  • 2 tbsp 30 ml vegetable oil
  • 5 tbsp 70 g unsalted butter
  • 1 medium yellow onion, sliced
  • 8 oz 227 g white button mushrooms, quartered
  • 7 oz 200 g shiitake mushrooms, caps sliced
  • 1 tbsp 15 ml fresh thyme, chopped
  • 1 clove garlic, minced
  • 1/2 cup 120 ml dry white wine
  • 2 tbsp 16 g all-purpose flour
  • 3/4 cup 180 ml sour cream
  • 1 tbsp 15 ml Dijon mustard
  • 1 tbsp 15 ml Worcestershire sauce
  • 1 1/2 cup 360 ml beef broth
  • 10 oz 280 g egg noodles
  • 1/2 cup 120 ml fresh parsley, chopped
  • 1 tbsp 15 ml chives, chopped, plus more for serving

Method

  1. Bring a large pot of salted water to a boil.
  2. Season the beef with 1 tsp salt and plenty of black pepper. Heat the oil in a large skillet over medium-high heat. Add the beef and cook untouched about 1 minute, then flip and cook until deep golden but still undercooked in the center, about 1 more minute. Transfer to a bowl.
  3. Add 1 tbsp butter to the skillet with the onion and 1/2 tsp salt. Cook, scraping up the browned bits, until softened, 4–5 minutes. Add 2 tbsp butter, both mushrooms, and thyme, and cook, stirring occasionally, until the mushrooms release liquid and start to crisp, 5–6 minutes. Stir in the garlic and cook until fragrant, about 1 minute.
  4. Pour in the wine, bring to a boil, then reduce heat and simmer until evaporated, about 5 minutes.
  5. Sprinkle the flour over the vegetables and stir to incorporate. Fold in the sour cream, Dijon, Worcestershire, and 1/4 tsp black pepper. Pour in the beef broth and stir until smooth.
  6. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  7. Meanwhile, cook the egg noodles to al dente. Drain and toss with the remaining 2 tbsp butter, parsley, and chives.
  8. Fold the beef and its juices into the sauce and cook, stirring, until the beef is cooked through but still slightly pink inside, about 1 minute.
  9. Divide the noodles among bowls, top with the sauce and beef, and sprinkle with more chives if desired.
